They conducted a study published in the Journal of Agricultural and Food Chemistry in 2018, focusing on the impact of stir-frying on sulforaphane stability. The researchers found that stir-frying broccoli led to higher sulforaphane concentrations compared to other common cooking methods.

The researchers chopped the broccoli into small pieces to maximize myrosinase activity, a process that occurs when the vegetable is damaged. They divided the samples into three groups – one raw, one stir-fried immediately after chopping, and one chopped and left to sit for 90 minutes before being stir-fried. The results showed that the broccoli left to sit for 90 minutes had significantly higher levels of sulforaphane compared to the one cooked immediately after chopping.

Recommendations for Cooking Broccoli

Based on their findings, the researchers concluded that chopping broccoli into small pieces and allowing it to sit for about 90 minutes before cooking is ideal for maximizing sulforaphane levels. They also suggested that a waiting period of 30 minutes could also be beneficial. While stir-frying has been shown to be the best cooking method for preserving sulforaphane, it requires additional time and effort compared to simply consuming raw broccoli.

The study highlights the importance of choosing the right cooking method to retain the health benefits of broccoli. While raw broccoli contains the highest levels of sulforaphane, stir-frying has been identified as the most effective cooking method for preserving this beneficial compound.
